Available in Asda, Booths, Morrison's, larger Sainsbury's & Wright's on line - this mix requires only the addition of oil and water. The mix works brilliantly with bread making machines as well as in a 2lb loaf tin in your domestic oven at home or create 12 muffins, 24 cupcakes, bake in an 8" round tin or as a tray bake.

Ginger Cake Mix

Cake

Wright’s Ginger Cake Mix            500g

Milk                                         200ml

Marmalade                               200g

Stem Ginger (in syrup)   5 pieces - chopped

Sultanas                                    50g

 

Glaze

Marmalade                               2-3 tbsp

 

Method (Makes 1 unit – 12 portions)

 

  1. Place the cake mix, milk and marmalade into a bowl.

 

  1. Mix together to form a smooth batter.

 

  1. Add the chopped stem ginger and sultanas and mix well.

 

  1. Pour into a well greased or pre-lined (2lb) loaf tin.

 

  1. Bake in a lower half of a pre-heated oven 170 °C (340°F) Gas mark 3-4 for approximately 55-60 minutes.

 

  1. Remove from a tin after 5 minutes and cool on a wire tray.

 

  1. Gently heat the marmalade for the glaze up.

 

  1. Brush onto the top of the cake.
