“I have used your bread mix products for a number of years, and coincidentally took part in a consumer survey on line that concerned your products. it was only then that i realised that you made a cake mix product, I had never seen this on the supermarket shelves here in Aberystwyth, west wales. A few days later i was in birmingham and came across this product in a supermarket and bought several for my mother in law who is rather elderly and enjoys baking ( as this would be less strenuous due to the rather quick preparaton time, like a lot of elderly persons she is not good at standing for lengthy periods. She loved the product, the taste, the texture and more so the simplicity. more so- we could have a slice of home made cake that was edible ( she often forgets what went in) I have been unable since then to find this product the store i bought it from, did not re-stock. and i cannot find it anywhere in aberystwyth or birmingham. Cheddar Cheese & Onion Bread Mix

  • Wright's Cheese & Onion Bread Mix 500g
    Lukewarm water 320ml

  • Chopped Leeks 400g
    Butter 50g
    Caerphilly Cheese (grated) 300g
    Egg 1 medium
    Fresh or Dried Sage 5g
    Coarse Black Pepper


METHOD (Makes 16)

  1. Lightly sauté the leeks in half the butter until soft and leave to cool.
  2. Loosely line a large roasting tin 24cm x 33cm (10" x 12 inches) with baking parchment and grease well using the remaining butter.
  3. Prepare the Cheese and Onion Bread Mix following instructions 1 and 2 on back of pack then roll out dough to an oblong shape approximately 45cm x 30cm (18 x 12 inches) on a lightly floured surface.
  4. Mix half the leeks and half the grated Caerphilly cheese with the beaten egg and spread this over the dough. Sprinkle over the sage and coarse black pepper before rolling up "Swiss roll" style from the widest edge.
  5. Divide the roll into 16 equal slices using a sharp knife and place these cut side up into the prepared roasting tin.
  6. Loosely cover with a damp tea towel; lightly oiled plastic or polythene and allow to prove in a warm place until the slices are well risen and joined together to almost fill the base of the tin.
  7. Meanwhile, preheat the oven to 220°C (425°F Gas Mark 7).
  8. Remove the cover from the dough and top with the remaining leeks and Caerphilly cheese. Bake in the oven for approximately 25-30 minutes until well risen and golden brown.
  10. Serve warm.
