With the wedding season upon us, sales of our Madeira 12kg mix and our Eggless Sponge in 12kg soar as a result of you all creating wonderful wedding cakes.

It was interesting to note that a talk on the History of Wedding Cakes was given by Royal cake maker Fiona Cairns at the V&A last week. She is an expert when it comes to matters cake; producing 800,000 cakes per year and of course was the one who created William & Kate’s Wedding Cake!

The wedding cake business has been carrying on since Roman times. At first, they were more savoury in flavour. Then things progressed to the breaking of breads over the couple’s heads - a tradition that still lives on in some countries.  It was a 16th Century French chef who made the first cake, which eventually led to the Croquembouche. A young 17th Century British baker who impressed with the first ever tiered cake, was inspired by the tall and elegant steeple of St Bride’s Church in Fleet Street. Around the same time a rich fruitcake also became the standard cake filling.

At the time of Queen Victoria’s wedding, cakes had become fashionable status symbols and hers was to be the largest of them all measuring 2½ meters in diameter, adorned with several 30cm tall sugar craft figures, covered in what became known as Royal Icing.

During the war, wedding cakes and the required ingredients were sparse. People made do with Plaster of Paris wedding cake look-a-likes!
